Rosemary Beet Chips

Beet chips are a healthy and fun way to eat your veggies! Season with coarse salt, extra virgin olive oil and fresh rosemary to add a gourmet twist that everyone will enjoy. Use local beets from community farmers such as Prairie Sun Farm in Fairfield to ensure the freshest and most nutritious beet chip you’ve had! Use as many beets as you’d like; two to four fill a standard baking sheet, depending on size.

Instructions:

Preheat oven to 375 degrees.

Slice beets as thin as possible - use a sharp knife or a mandolin for 1/8” slices.

Put slices in a bowl, toss with olive oil, rosemary and salt.

Bake in oven for about 20 minutes, checking every 5 minutes after the first 10 minutes of cooking. Once crisp, remove from oven and let cool before serving. Store in an airtight container for a few days.
