1/4 cup walnuts
3 large garlic cloves, minced from Prairie Winds Heritage Farm
1 cup fresh basil, packed from Squash Blossom Farm
1.5 cups fresh spinach, packed from Kraay's Market & Garden
1/2 tsp. sea salt
1/2 tsp. fresh ground pepper
3/4 cup good extra-virgin olive oil
1/2 cup grated Parmesan
Salt and pepper to taste
Place walnuts and garlic in bowl of food processor fitted with a steel blade. Process for 15-30 seconds.
Add basil, spinach, salt, and pepper. With processor running, slowly add olive through feed tube.
Process until pesto is smooth. Add Parmesan and process until well combined, about one minute.
Use immediately or place in glass storage container with a thin layer of olive oil on top.
